Menu Plan Monday: My Dinner Menu for the Week {recipes & ideas}

You may notice some repeats this week – I’m trying to eat lean and use up food we already have before we go on vacation in a few weeks.

Monday – Cajun style baked mahi mahi

Tuesday – large Greek salad

Wednesday – Cuban black beans and rice

Thursday – Red Curry Glazed Salmon with brown rice

Friday – Butternut Squash Ravioli with Sage Butter Sauce

My husband and I made a pact that he won’t eat any more pizza until our vacation, and I won’t have any major sweets like ice cream or cakes. I had my first test last night when a coworker brought in two dozen Krispy Kreme donuts, but I pictured myself in my swimsuit and held strong.

Hello Rachel!
That’s sound terrific.. But I would like to know what is Mahi Mahi? Is that a fish?
