Menu Plan Monday

I can’t wait to tell you guys about the spring vegetable, herb, and fruit gardens we planted this weekend! In the meantime, check out what I’m making for dinner this week. While my diet has eased up a bit, I’m still trying more meatless recipes and staying relatively low-carb. I found I had a lot of leftovers last week, so in an effort to reduce wastefulness, I’m only planning 4 meals:

Tasty lentil tacos & fresh guacamole: A New recipe to try! I will serve over lettuce to make more of a taco salad, rather than using taco shells, to reduce carbs

Turkey Burgers Made this recipe with some modifications recently, and my husband has already requested that I make it again.

Quick & Easy Pecan Crusted Salmon This is perfect for a Friday dinner during Lent.

Whole Wheat Pasta & Marinara Sauce

Thanks for the ideas on the turkey burger– I’ve been wanting to try it but wasn’t sure what to do with it

You can use it to replace ground beef in most recipes. I made a white chili with it recently and that was good too!

My husband actually said he preferred the ground turkey to ground beef! I’m glad we have found a healthier substitution that we actually prefer, instead of feeling like a sacrifice :)

I can’t wait to see your gardens!

We always have a lot of leftovers too. I usually plan 3-4 meals a week. It’s kind of nice not to have to make dinner half the week!

Well we are learning a lot as beginning gardeners. Wouldn’t you know that as soon as we planted everything (transplants from nursery, not seeds), we had a mild frost the next night! It had been in the 70s-80s recently so I thought the last one was past. Luckily it looks like everything survived except the peppers and basil. Then our dogs keep trying to sample everything, so we had to replant some of the berry bushes and build a fence.
