I can’t wait to tell you guys about the spring vegetable, herb, and fruit gardens we planted this weekend! In the meantime, check out what I’m making for dinner this week. While my diet has eased up a bit, I’m still trying more meatless recipes and staying relatively low-carb. I found I had a lot of leftovers last week, so in an effort to reduce wastefulness, I’m only planning 4 meals:
