
Menu Plan Monday is a meme which I use for dinner ideas and recipes. I look at my pantry and the sales circulars, then try to plan a variety of dinner options at the beginning of the week. It’s not set in stone and I often switch around the order of the meals, but it’s nice having all the ingredients on hand in advance to make whatever I choose.
Sunday – Red lentil curry Finally made this today in advance. I decided to go with the Indian cuisine theme and also made Roasted Indian Cauliflower. I really liked the cauliflower and am kind of neutral on the lentils. They are really nutritious and taste okay but probably not anything I would crave.
Monday – Asian Grilled Tempeh Triangles This is a recipe from the South Beach diet cookbook and is my second attempt at tempeh (a soy based meat alternative). I didn’t care for it the first time but want to be sure I’m giving it a fair chance. Plus I had already bought it
Tuesday – Stir Fried Beef & Broccoli
Wednesday – Coconut Lime Tofu Soup We love Thai flavors so this sounds really good. This is from the Type A Housewife (a vegetarian food blog), so if you’re looking for more healthy meatless recipes with nice photos, you should really check it out.
Thursday – NY Strip (while not organic, the locally owned grocery store who gets their quality beef locally had a really good price on it this week) with faux mashed potatoes (using cauliflower)
Friday – Whole Wheat Pasta with Mushroom Cream Sauce. I have a 5k the following morning and Phase 1 of my low carb diet will be over, so it’s a great excuse to carb load
Weekend – leftovers

I could possibly get my husband to eat the Stir Fried Beef & Broccoli but not the other items
I LOVE stir fried beef and broccoli! Its like having chinese food without all the extra calories they pack in.
