
Hope everyone has a safe and fun Halloween today! With the weather a bit cooler this week, I’m making several soups and slow cooker recipes for dinner.
I have found that cooking 7 meals a week is not really necessary for just me and my husband. Inevitably, we will have leftovers to use up or end up eating out for at least one of our dinners. In an effort to reduce waste and save money on groceries, I am only buying ingredients for 5 meals a week now.
Monday – Currried Butternut Squash Soup – I didn’t get around to making this last week, so we are trying it tonight!
Tuesday – Weight Watchers Smart Ones Entrees – this is a frozen “cheat” meal but I need to review these for a campaign, and it’s a work night so this will be an easy dinner for us.
Wednesday – pesto chicken (save money by making the pesto yourself)
Thursday – Slow Cooker Carnitas
Friday – Chicken Tortilla Soup – one of my husband’s favorites and most often requested recipes

I just had Butternut Squash soup tonight, and was wondering how it would taste with curry powder. How was it?? I’m definitely going to use this recipe, and maybe try some of the other ones too!
It was okay. My husband actually ate it after we added some more spices, and I think it tasted better when I added a dollop of plain Greek yogurt. I would make it again but more as a side than a main dish.

My husband loves carnitas!
These turned out so good! I actually used a different recipe which was a little more time-consuming but worth it. I’m sure mine weren’t that authentic because I did not use lard, but my lighter version was still really good. I already want to make carnitas again.

I like the Chicken Tortilla Soup. I like to make extra chicken so I have it for a second meal. It saves time and this recipe would be great for that. Especially on a cold fall night.
Yep, it is perfect for that, or doing the opposite and using up leftover chicken for the soup.

On a snowy cold evening like tonight, must say the Chicken Tortilla Soup looks delicious. Hearty chunks of chicken/Tortilla’s coupled with complimentary spices cilantro/oregano. But the kicker is the HEAT Chile peppers/Garlic, warms you toasty up inside. Want some right now !
Chicken Tortilla Soup is my all-time favorite soup…well, next to loaded potato soup, YUMMY!
